Prawn Biriyani

No doubt that biriyani is the favourite rice recipe of most Indians. However, among the many varieties of biriyani here is a video on how to make exotic prawn biriyani.

The first step is to marinate the prawns. Take around have kilogram of washed and cleaned prawn pieces in a bowl. Add 1 tsp of red chilli powder, one-fourth tsp of turmeric powder, a pinch of garam masala, half tsp lemon juice and appropriate quantity of salt. Mix the prawns well with the masala. Add one tsp of ginger-garlic paste and mix the masala well into the prawns. Leave the marinated prawns to absorb the flavours for around 30 minutes.

Meanwhile, add about 50 mL of oil to warm pan and add quarter cup cashews. Similarly shallow fry raisins and onion separately. Add the marinated prawns to the remaining hot oil and shallow fry it. The prawns must be turned to all sides so that they get fried uniformly. The prawns may be transferred to a separate vessel.

Now masala for the biriyani shall be prepared.
