Karimeen Pollichathu (Pearlspot grilled in banana leaf)

Chilly powder-2 teaspoon
Ginger(crushed)-1 teaspoon
Green chilly-2
Garlic-1 and 1/4 -1 and 1/2
Tomato -(small)chopped
Turmeric powder-1/4
Coriander powder-1 and 1/2
Pepper powder-1 and 1/4
Curry leaves- 10-15
Oil-to fry
Bananaleaf – 1 large
Small onion-scliced 1 and 1/2 cup
To marinate fish
Chilly powder- 1 teaspoon
Salt -to taste
Pepper powder- 1/4 teaspoon
Turmeric powder-1/4 teaspoon
Water-to form a paste
Mix all the above ingredients into a paste .Draw fine lines on the fishes so that the
could be embalmed properly.Take a fry pan add oil enough to fry 2 fishes.
When the oil is boiled place the fishes to the pan and get them shallow fried.
Now take the fried fishes and keep it aside.
To form masala
Small onion- finely sliced, 1and 1/2 cup
Ginger- crushed 1teaspoon
Garlic-chopped 1and 1/4 to 1 and 1/2teaspoon
Green chilly – chopped 2 teaspoon
Tomato-1 small chopped
Add small onion to the remaining oil in which the fish was fried.
Add crushed ginger,slic ed garlic ,chopped green chillies and saute till its raw fragrance is gone.Mix the ingredients properly.Now we can add 1 and 1/4teaspoon chilly powder,coriander powder 1 and 1/4 teaspoon, 1/2 teaspoon pepper powder and stir them.
Now add chopped tomatoes and mix well.You can prefer lemon juice or tamarind juice to tomatoes for a sour taste.
Cook the contents with a lid for 5 minutes.
Clean the banana leaf and dry it on the flame as you see in the video.Pour a teaspoon oil to the
pre heated and dried banana leaf. Smear the oil to all the entire portion of the leaf.Sprinkle some curry leaves on it.
Put one or teaspoon of cooked fish masala onto the banana leaf and place a fried fish on it.Again use one or two teaspoon sof cooked masala over the fried fish as you see in the video.This is done so that the fish is covered with the masala.Fold the leaf from sides and cover it properly.
Repeat the procedures to cover another fish.
Heat a pan pour one teaspoon of oil to it and place the fried fishes covered with banana leaves.Fry them with lid covered for a while . Open the lid a turn the other side of the leaf to be fried. Cook with lid covered as shown in the video.
Now remove the dried fishes from the pan and serve hot
