Majboos is a treat for all chicken lovers’ right from the Arabian lands. Here is the recipe for this.
Following the arab style of cooking, onion, green chilli and tomato are roasted in olive oil with sufficient salt and ketchup added to them. Then the Arabian masala is added to this and roasted. Arabian masala includes jeera, cardamom, cinnamon, cloves, dried lemons, bay leaves, pepper and garlic. Chicken pieces are placed on this and allowed to cook. Add chicken stoke cubes and cook again for 5 minutes. Water and salt is added and the chicken is cooked in boiling water for about 5 minutes. The chicken is taken out of this and kept aside. Some olive oil is added to the chicken and baked in oven.
Washed basmati rice is added to the boiling water with masala (in which chicken was cooked) and is allowed to cook. Baked chicken pieces are then laid on this rice and served hot.
